Banana Fritters
Banana Fritters These soft, deep-fried bananas are drizzled with a sweet, rich caramel sauce. Serve with ice cream to make this mouth-watering dessert even more delectable.


All-purpose flour 1  cup 250  mL
Baking powder 2  tsp. 10  mL
Baking soda 1/4  tsp. 1  mL
   
Water 1 1/4  cup 300  mL
   
Medium bananas, cut into 3 inch (7.5 cm) pieces
All-purpose flour 2  tbsp. 30  mL
   
Cooking oil, for deep-frying    
   
CARAMEL SAUCE    
Hard margarine (or butter) 1/3  cup 175  mL
Brown sugar, packed 1  cup 250  mL
Water 1/3  cup 175  mL
Cornstarch 1  tbsp. 15  mL
Whipping cream 1/2  cup 125  mL


Combine first 3 ingredients in large bowl. Make a well in centre.

Add water to well. Stir until batter is smooth.

Coat banana in second amount of flour. Dip into batter.

Deep-fry, in 2 to 3 batches, in hot (350°F, 175°C) cooking oil for 3 to 5 minutes until golden brown. Remove to paper towels to drain.

Caramel Sauce: Combine all 5 ingredients in medium saucepan. Heat and stir on medium-high for 5 to 10 minutes until boiling and thickened. Makes 1 1/2 cups (375 mL) sauce. Drizzle over banana. Serves 4.
