Banana Fritters

These soft, deep-fried bananas are drizzled with a sweet, rich caramel sauce. Serve with ice cream to make this mouth-watering dessert even more delectable.

All-purpose flour

Medium bananas, cut into 3 inch (7.5 cm) pieces
|

All-purpose flour
|
2 tbsp.

Cooking oil, for deep-frying
|
|
|
|

|
|
|
CARAMEL SAUCE
|
|
|
|
Hard margarine (or butter)
|
1/3 cup
|
175 mL
|
|
Brown sugar, packed
|
1 cup
|
250 mL
|
|
Water
|
1/3 cup
|
175 mL
|
|
Cornstarch
|
1 tbsp.
|
15 mL
|
|
Whipping cream
|
1/2 cup
|
125 mL
|
Combine first 3 ingredients in large bowl. Make a well in centre.
|
Add water to well. Stir until batter is smooth.
|
Coat banana in second amount of flour. Dip into batter.
|
Deep-fry, in 2 to 3 batches, in hot (350°F, 175°C) cooking oil for 3 to 5 minutes until golden brown. Remove to paper towels to drain.

Caramel Sauce:
Combine all 5 ingredients in medium saucepan. Heat and stir on medium-high for 5 to 10 minutes until boiling and thickened. Makes 1 1/2 cups (375 mL) sauce. Drizzle over banana. Serves 4.
