Brie in Pastry

A great make-ahead recipe. Assemble pastry and cheese, wrap well and freeze. On the day of your event, thaw, brush with egg and bake as directed.

Puff pastry patty shells, thawed

Brie cheese round
|
4 ounce

125 gr.

Large egg, fork-beaten

Medium unpeeled red apples, thinly sliced

Roll out 1 pastry shell on lightly floured surface to 5 1/2 to 6 inch (14 to
15 cm) circle.

Place cheese in centre of pastry. Bring up sides, pleating dough around edge. Roll out second pastry shell. Cut circle in pastry to fit top of cheese. Place on top of cheese. Crimp edge to seal. Cut decorative shapes from scraps of pastry. Place on top.

Brush pastry with egg. Place on greased baking sheet. Bake in 450°F (230°C) oven for 15 minutes. Reduce heat to 350°F (175°C). Bake for about 5 minutes until pastry is golden. Transfer to serving plate.

Arrange apple around pastry. Serves 6.
