Denver Noodle Frittata
Denver Noodle Frittata A noodle frittata? It works! Noodles add texture to this familiar-tasting, family-friendly frittata


Water 4  cups 1  L
Salt 1/2  tsp. 2  mL
Tiny shell pasta 1  cup 250  mL
   
Cooking oil 1  tbsp. 15  mL
Diced cooked ham 3/4  cup 175  mL
Chopped green pepper 1/2  cup 125  mL
Chopped onion 1/2  cup 125  mL
   
Large eggs
Salt 1/4  tsp. 1  mL
Cayenne pepper 1/8  tsp. 0.5  mL
   
Grated medium Cheddar cheese 1  cup 250  mL
   
Chopped fresh parsley 1  tbsp. 15  mL


Combine water and salt in medium saucepan. Bring to a boil. Add pasta. Boil, uncovered, for 6 to 8 minutes, stirring occasionally, until tender but firm. Drain. Return to same pot. Cover to keep warm.

Meanwhile, heat cooking oil in medium frying pan on medium. Add next 3 ingredients. Cook for about 5 minutes, stirring occasionally, until onion is tender-crisp. Add pasta. Stir. Spread evenly in pan.

Preheat broiler. Beat next 3 ingredients with fork in medium bowl. Pour over pasta mixture. Reduce heat to medium-low. Cook, covered, for about 5 minutes until bottom is golden and top is almost set. Remove from heat.

Sprinkle cheese over top. Broil on centre rack in oven (see Coach, page 95) for 2 to 4 minutes until cheese is melted and golden

Sprinkle with parsley. Cuts into 4 wedges.
