Denver Noodle Frittata

Diced cooked ham

Grated medium Cheddar cheese

Chopped fresh parsley

Combine water and salt in medium saucepan. Bring to a boil. Add pasta. Boil, uncovered, for 6 to 8 minutes, stirring occasionally, until tender but firm. Drain. Return to same pot. Cover to keep warm.

Meanwhile, heat cooking oil in medium frying pan on medium. Add next 3 ingredients. Cook for about 5 minutes, stirring occasionally, until onion is tender-crisp. Add pasta. Stir. Spread evenly in pan.

Preheat broiler. Beat next 3 ingredients with fork in medium bowl. Pour over pasta mixture. Reduce heat to medium-low. Cook, covered, for about 5 minutes until bottom is golden and top is almost set. Remove from heat.

Sprinkle cheese over top. Broil on centre rack in oven (see Coach, page 95) for 2 to 4 minutes until cheese is melted and golden

Sprinkle with parsley. Cuts into 4 wedges.
