Green Onion Cakes
Green Onion Cakes Impress your friends and family with this easy Oriental appetizer.


All-purpose flour 2 cups  500 mL 
Salt 1/2  tsp. 2  mL
   
Very hot, but not boiling, water 3/4  cup 175  mL
   
Thinly sliced green onion 3/4  cup 175  mL
   
Cooking oil 2  tbsp. 30  mL
Salt, sprinkle    


Measure flour and salt into food processor.

With lid in place and machine running, pour hot water slowly into food chute until dough starts to form a ball. Turn dough out onto lightly floured surface. Knead for about 1 minute until smooth. Cover with plastic wrap. Let stand for at least 30 minutes. Shape into long roll. Divide into 12 portions.

Put green onion into shallow bowl. Flatten 1 piece of dough slightly between your palms. Press each side into green onion. Knead into dough. Shape into flattened circle. Roll out on lightly greased surface with greased rolling pin into 4 1/2 inch (11 cm) circle. Repeat with remaining dough, keeping onion cakes covered with plastic wrap to prevent drying out.

Heat 2 tsp. (10 mL) cooking oil in non-stick frying pan on medium-high. Arrange 4 onion cakes in single layer in frying pan. Cook on both sides, flattening down with lifter, until brown patches appear. Do not overcook. They should be soft, pliable and chewy. Remove to paper towels to drain. Sprinkle with salt. Repeat with remaining cooking oil and onion cakes. Cut into 2 or 4 pieces each. Makes 12 green onion cakes.
