Mexi-Pizza Snacks

Pizza with a Mexican flair. Adjust spiciness to your taste by using either mild, medium or hot salsa. This dish goes well with Red And Green Salad.

English muffins (or hamburger buns), split

Arrange muffin halves on ungreased baking sheet. Spread each with 1 tbsp. (15 mL) salsa. Sprinkle Monterey Jack cheese and Parmesan cheese over salsa. Scatter tomato over cheese. Sprinkle salt
and pepper over top. Broil 4 inches (10 cm) from heat for 3 1/2 to 4 minutes until hot and cheese is melted. Serves 2.
