Mexi-Pizza Snacks
Mexi-Pizza Snacks Pizza with a Mexican flair. Adjust spiciness to your taste by using either mild, medium or hot salsa. This dish goes well with Red And Green Salad.


English muffins (or hamburger buns), split
Salsa 1/4  cup 60  mL
Grated part-skim Monterey Jack cheese 1/2  cup 125  mL
Grated Parmesan cheese 2  tbsp. 30  mL
Medium tomato, seeded and diced
Salt, sprinkle n/a  n/a 
Pepper, sprinkle n/a  n/a 


Arrange muffin halves on ungreased baking sheet. Spread each with 1 tbsp. (15 mL) salsa. Sprinkle Monterey Jack cheese and Parmesan cheese over salsa. Scatter tomato over cheese. Sprinkle salt and pepper over top. Broil 4 inches (10 cm) from heat for 3 1/2 to 4 minutes until hot and cheese is melted. Serves 2.

1 serving: 295 Calories; 12.3 g Total Fat; 637 mg Sodium; 15 g Protein; 31 g Carbohydrate; 1 g Dietary Fiber.

Variation: Omit Monterey Jack cheese. Use same amount of Monterey Jack With Jalapeño cheese.
