Pepper Beef Pinwheels

Colourful spinach and red pepper make these an especially attractive addition to any potluck. Take wrapped and chilled rolls in a cooler to the
potluck and slice just before serving.

Tub of herb and garlic spreadable cream cheese

Flour tortillas (9 inch, 22 cm, diameter)

Thinly sliced deli roast beef

Fresh spinach, stems removed, lightly packed

Roasted red peppers, drained, blotted dry, cut into strips

Spread cream cheese evenly on 1 side of each tortilla, almost to edge.

Layer roast beef on top of cream cheese, leaving 1/2 inch (12 mm) edge. Layer spinach over beef.

Layer red pepper strips across each tortilla, about 2 inches (5 cm) from edge. Roll up tightly, jelly
roll-style. Trim ends. Cut each roll diagonally, sushi-style (see Diagram), into 8 equal slices. Makes
64 slices.

Note:
