Pepper Beef Pinwheels
Pepper Beef Pinwheels Colourful spinach and red pepper make these an especially attractive addition to any potluck. Take wrapped and chilled rolls in a cooler to the potluck and slice just before serving.


Tub of herb and garlic spreadable cream cheese 8 oz.  250 g 
Flour tortillas (9 inch, 22 cm, diameter)
   
Thinly sliced deli roast beef 1 1/2   pound 680  gr.
Fresh spinach, stems removed, lightly packed 4  cups 1  L
   
Roasted red peppers, drained, blotted dry, cut into strips 2 1/2   cup 625  cup


Spread cream cheese evenly on 1 side of each tortilla, almost to edge.

Layer roast beef on top of cream cheese, leaving 1/2 inch (12 mm) edge. Layer spinach over beef.

Layer red pepper strips across each tortilla, about 2 inches (5 cm) from edge. Roll up tightly, jelly roll-style. Trim ends. Cut each roll diagonally, sushi-style (see Diagram), into 8 equal slices. Makes 64 slices.

1 slice: 51 Calories; 2.3 g Total Fat (0.8 g Mono, 0.2 g Poly, 1.1 g Sat); 11 mg Cholesterol; 4 g Carbohydrate; trace Fibre; 4 g Protein; 47 mg Sodium

Note: For best results, wrap each roll with plastic wrap and chill overnight before cutting.
